The combo of the sweet tomatoes and the tangy vinegar make this dish really delicious!! This works really well served with rice. Below is a (horrible) picture of ours tonight with some roasted asparagus.
4-6 chicken breasts
14.5 oz can diced tomatoes
1/2 cup onions (red, yellow, whatever)
1 tlb italian seasoning
1/2 cup balsamic vinegar
1-2 cloves garlic
salt and pepper
extra virgin olive oil
On med-high heat, drizzle pan with evoo, season chicken breasts with salt and pepper and brown on both sides, also adding in the onion. I add the garlic after the chicken is browned to avoid burning, it can get bitter. Once chicken is browned and garlic is in and fragrant, add the can of diced tomatoes, italian seasoning and balsamic vinegar. Simmer for 15-20 mins on med heat until chicken is cooked through.
