Trying to join the blogging world (again)


At this point, I'm basically talking to myself because I have no followers :-(. Hopefully that will soon change!! I'll start this off by posting a recipe below, and some new pictures of my adorable boy. He makes me want to pull my hair out about 1000 times a day but I can't live without him <3.







Easy Stroganoff
This is a super easy stroganoff recipe that my husband asks for regularly (and super picky Dominic even eats it!). I hope you love it as much as we do around here!

1 lb lean ground beef or turkey
1/2 lb whole wheat egg noodles (regular egg noodles, rice, etc work here also)
1/2 c chopped onion
1 c light sour cream
1/4 tsp paprika
1 tsp minced garlic
2 tlbs flour
1 can reduced sodium cream of mushroom soup
1/2 c or so of peas(frozen or cooked, both will heat up in the pan quickly)
2 tlbs butter
few splashes of worcestershire
pepper

In a skillet, brown meat with the butter, worcestershire, onion, flour and paprika (you can add a little more butter here if you wish. I normally use nonstick spray and the 2 tlbs butter to cut down on fat). Once the meat is cooked through, add cream of mushroom soup and let simmer for 5 minutes. Stir in sour cream and peas, warm through, add noodles, and pepper to taste.

*If you don't have cream of mushroom, no prob, use cream of chicken. Worcestershire isn't absolutely necessary, I just love the taste it adds. If you don't have peas, no biggie! If you like fresh mushrooms, add some! Enjoy!
